Banana Nut Muffins

  • 1 ½ cups all-purpose flour
  • 1 t. baking powder
  • 1 t. baking soda
  • ½ t. salt
  • 1 t. cinnamon
  • 3 large bananas, mashed
  • ½ cup sugar
  • ¼ cup brown sugar
  • 1 egg (room temperature)
  • 1/3 cup butter, melted
  • 1 t. vanilla
  • 1 cup walnuts, chopped

Preheat oven to 350 degrees. Coat muffin pan with non-stick spray, or use paper liners (I always use liners!). Sift together the flour, baking powder, baking soda, cinnamon, and salt; set aside.

Combine vanilla, bananas, sugar, egg, and melted butter in a large bowl. Fold in flour mixture, and mix until smooth, but do not over mix. Scoop mixture into muffin pans and be careful not to overfill each muffin cavity. Top each muffin with chopped walnuts. Bake mini muffins for 10 to 15 minutes or large muffins (12-count pan) for 25 to 30 minutes.

I typically make these muffins when we have a busy work week and need quick, on-the-go options for breakfast and snacks. George loves them too – we cut off the top (with the nuts) and chop the muffin into small pieces for him.
