What. A. Week. Some of you may already know this, but I spent the majority of the week in San Antonio, TX at a conference for work. While it was oodles of fun, it was a tremendous amount of work and took a significant amount of energy. On Friday, I spent the day in Austin for work meetings and drove home early in the evening. Needless to say, I was ready to be home last night. And in random order, the top moments of the week were:
- Running the NCSL 5K (29.:59)
- Lunching with my colleagues at Mi Tierra – delicious!
- Going into “No Limit Soldier” mode…on a Tuesday!
- Unexpectedly running into old and dear friends
- Hugging John after 4 days apart — priceless!
After all this, John and I were ready for a relaxing night at home. For dinner, we each made our own pizzas. Thanks to Udi’s Pizza Crusts, mine was even GF!
I created a pizza with tomato sauce, Roma tomatoes, mozzarella cheese, turkey pepperoni, arugula, and crushed red pepper.
The crust was amazing! Almost like regular pizza. For dessert, I had two of these delicious GF cookies from the Immaculate Baking Co.
They were fantastic! Moist and flavorful.
