A Saturday at Home

As many of you know, I have been burning up the roads and sky lately with loads of personal and business travel. We were supposed to go back to Corpus Christi this weekend, but my body wasn’t having it.  I tried to wake up and get moving this morning and it just wasn’t happening.  It all worked out however, since I had a lot of work (business and personal) to do.  When I finally got up, I made gluten-free waffles using Pamela’s Baking Mix. 

I added blueberries to add some “oomph” and added more berries on top to up my nutritional value.  These were really tasty — John even liked them!  After breakfast, I did some cleaning and then parked myself in front of the computer for 4 hours of work. I broke for lunch and had leftovers from last night’s dinner — a tamale, salsa and refried beans from Pico’s Mex Mex. 

It was so delicious! After lunch, I spent 3 hours organizing my bedroom and closet (more on that tomorrow).  After my cleaning-fest, I  did 4 miles of speedwork at the gym, then ran a few errands. For dinner, we decided to stay home and keep it really simple.  We ended up grilling gluten-free chicken and apple sausage and had green beans, cannelini and pinto beans as sides.

We also had some cherries for dessert.

Although today wasn’t what I had planned, it was exactly what I needed.  Good Night!
