Blueberries & Ham on a Sunday Morning

I slept in this morning and it felt GREAT! :mrgreen: Once I woke up, I hustled into the kitchen to prepare a gluten-free breakfast. Last night I purchased Van’s Blueberry gluten-free waffles.  I toasted them in the oven and highly recommend this method.  You can’t beat the toasting texture that an oven provides. While the waffles toasted, I warmed Jones’ gluten-free Canadian bacon on the stove. 

3 slices = 60 calories. You can’t beat that!  Since I can’t use butter and syrup on my waffles (it is hard to find gluten-free versions), I had to make my own.

Blueberry Syrup

  • 8 ounces fresh blueberries
  • 1/8 cup orange juice
  • 1/8 cup agave nectar

Mix all 3 ingredients on the stove top and bring to a boil. Reduce to low and simmer for 10 minutes. Serve warm.

This is a tasty and naturally sweet alternative to syrup that I think you will enjoy on pancakes, ice cream, as a dip, you name it. Of course, we used it on waffles.
