Banana Chocolate Oatmeal Cookies

After reading the banana recipes in Cooking Light’s October issue, I was inspired to use the 3 bananas I had in my freezer.  I basically combined a few banana bread recipes to come up with a recipe for Banana Chocolate Oatmeal Cookies.

Banana Chocolate Oatmeal Cookies

  • 1 cup whole wheat flour
  • 2 1/4 cup old-fashioned oats
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 1/2 cup agave nectar
  • 1/2 cup skim milk
  • 2 teaspoons Mexican vanilla
  • 1 tablespoon applesauce
  • 1 cup banana (mashed)
  •  1 cup chocolate chips
  • 1/2 cup diced walnuts

Preheat oven to 350. Mix all the ingredients in a large bowl. It is probably most helpful to start with the dry ingredients, then add the wet ingredients.  Once combined, drop by spoonful onto greased baking sheet.  Bake for 12 minutes, cool for 5 minutes on the baking sheet, then transfer to cooling racks.  Makes 24 fabulous cookies!

I enjoyed 2 cookies with ice-cold orange juice!
