Pumpkin Oatmeal Muffins

With Fall at our doorstep, I have been anxious to prepare a “Fall Dish!” After spotting a can of pumpkin in my pantry I just knew I had to make Pumpkin Oatmeal Muffins.

Pumpkin Oatmeal Muffins

  • 1 cup flour
  • 1 1/4 cup old-fashioned oats
  • 1/4 cup Splenda brown sugar mix
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 15 ounce can pumpkin (not pumpkin pie mix)
  • 1/2 cup Eggbeaters
  • 1 T. canola oil
  • 1 teaspoon cinnamon
  •  1/4 cup golden raisins
  •  1/4 cup chopped walnuts

Preheat oven to 375 degrees.  Mix all of the ingredients and spoon into muffin tin.  Bake for 18 minutes! Enjoy (Makes 12)! :mrgreen:
