Since Fall is on her way in, I thought it was a good time to reinstate “Crock Pot Monday!” Hip, Hip, Hooray! As you know, we have been doing “Crock Pot Monday” for years and it’s a time honored tradition in our house. In honor of my DC trip last week, I decided to make Senate Bean Soup…health-ified, of course!
Shelly’s Senate Bean Soup
- 1 14 oz package Jennie-O turkey sausage links, sliced
- 1 6 oz package Canadian bacon, diced
- 1 pound dry navy beans
- 1 onion, sliced into large chunks
- 1 carrot, diced
- 3 celery stalks, diced
- 1 T. olive oil
- 1 T. cayenne pepper
- 1 bay leaf
- salt and pepper, to taste
- 8 cups of water
Put all ingredients into the crock pot and cook on low for 10 hours! The scent will make your house smell FABULOUS! Enjoy!
