Comfort Food – Healthy Style

I was craving comfort food for dinner, so I made spaghetti and meatballs.  But you know me…I did it the healthy way! 😀 For starters, I made spicy turkey meatballs.

Shelly’s Spicy Turkey Meatballs

  • 1 cup breadcrumbs
  • 1/4 cup fat-free milk
  • 1 lb. lean ground turkey
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 T. Parsley
  • 1 T. red chile pepper flakes
  • 1/4 cup eggbeaters
  • Salt & Pepper

Mix all of the ingredients in a large bowl.  Shape the mixture into small balls and place onto a greased cookie sheet. Bake @ 350 for 30 minutes.  Once cooked, place in tomato sauce (see below).

Shelly’s Spicy Tomato Sauce

  • 1 28 ounce can of crushed tomatoes
  • 2 cloves of garlic, minced
  • 1/2 cup onion, chopped
  • 1 T. Parsley
  • 1 T. red pepper chile flakes
  • Salt & Pepper
  • 8 ounces sliced Baby Bella Mushrooms
  • 2 T. olive oil

Heat olive oil in a pan, add onion and garlic.  Add mushrooms and cook on medium heat for 5 minutes.  Add tomato sauce and spices and cook on low for 30 minutes. Add meatballs and cook for 5 more minutes.  Serve atop pasta. Enjoy!

Tonight I used whole wheat spaghetti as my pasta!  John loved it!  :mrgreen:
